Chicken Soup with Lemon Grass
Homemade chicken soup with lemon grass and lemon grass tea. Prep time: 30-40 min. Cook time: 3 hours

- 1 whole 5-6 lb. chicken
- 8 c. water
- 3 tbsp. lemon grass tea leaves
- 6 carrots, peeled and sliced into chunks
- 2 onions, sliced
- 2 celery stalks, sliced
- 2 parsnips, peeled and sliced
- 1/2 c. fresh parsley
- dill
- lemon grass
Directions
Remove giblets from chicken cavity. Pat chicken dry, inside and out.
Place chicken in large soup pot. (Add giblets for flavor if you like.) Cover with water.
Bring water to boil and skim off scum on top. Reduce to a simmer.
Add carrots, onions, celery, and parsnip to pot.
Wash parsley and cut about 1/2 c. into the pot.
Add salt and pepper to taste. Add 3 tbsp. lemon grass tea leaves.
Cover pot and simmer on low for 3 hours.
In the last 30 min., add dill to taste.
When soup is done, remove chicken from the pot. Remove meat from the carcass and add meat back into pot.
