Mother's Day Meal
Dinner for 8 (or how a mom looses her mind on a daily basis)
2 h 2Ingredients
- Meat -what ever is on sale and has enough for 8 people
- 1 fennel bulb
- 1 pkg of plum tomatoes
- 2 globe artichokes
- balsamic vinegar
- olive oil
- sea salt
- worchestershire sauce
- rice
- saffron
- wuyi oolong tea
Directions
Brew a strong cup of tea. trust me do this first! Use Adagio's Wuyi Oolong. Place the slabs of meat into a bowl drizzle baslamic vinegar, olive oil and worchestershire over meat while holding baby on left hip (right handed mama). it will be 2-3 Tbsp of each but since you have only 1 hand you can't really measure. Take the Wuyi Oolong tea leaves from the brew cup of tea and toss them in too. Throw some sprigs of fennel on top and that wonderful salt shaker rabbit thingy... the one that you can do with one hand, 3 squeezes over the meat in the bowl.
Carefully toss in fridge! cuz it is easy this way.... measure 2 cups rice 4 c water toss in a microwavable bowl with 5 tea leaves and 5 lil saffron stamens and a tsp of olive oil. Nuke it for 20 -25 min. By this time you will set baby down on a blanket to play with some toys. PBS has a nice show for the kids with weird creatures using math to save cyber worlds for the other kids to watch. Rinse artichokes and trim spikes. Cut one in half. Carefully cut center feathery chokes out of both halves. Cut in half inch silces...lengthwise! This may be the moment when you think that the electric knife sharpener was a romantic chanukah gift after all!
Saute in a pan with about 2 tbsp olive oil. Inevitably the baby will cry the minute you are infront of the hot pan, so call 2nd oldest child to hold her. This is a momentary appeasement but will get the artichokes nice and golden edges without burning any babies.
By now you have remembered you needed to cut the fennel bulb in 1/4 inch slices and marinate in balsamic vinegar, olive oil and 1/3 of the cup of tea. The baby is now screaming cuz she can see her mother but can't touch her. So throw the meat in an oven safe baking dish..do not for get to actually turn on the oven so it will be cooked by the time daddy gets home!!! this is very important unless you plan steak tartar as the main dish.
Place in oven and retrieve baby from the 9 yr old. Call oldest child to carefully halve tomatoes and let those marinate in more balsamic vinegar and salt.
Is the baby fed and sleeping now? thank G-d! Drink the rest of the Wuyi Oolong tea and catch your breath!
Daddy will call you to let you know he is half way home and the phone will wake up the baby. This is better than setting the clock on the stove to remind you to check the meat you tossed in the oven!
Carefully later artichokes fennel and tomates, add a side of the rice. Explain the the kids how yes this is what we are eating for dinner, We can not live on chicken niggets and yogart!!!! If child #3 says "mmm. i smell smoke. is dinner ready?", you will know the meat is no longer med-well but WELL beyond done and ready to be plated as well. Serve to family with the new invisible grape koolaid that doesnt stain!!!! And eat a nice cold dinner while holding a baby. "um, honey??? could you cut my steak?"
