Almond - Orange Drop Cookie (not GF)
The Almond-Orange Drop Cookies are a delightful treat that combines the nutty richness of almonds with the bright, citrusy flavor of orange. These cookies are soft and slightly chewy, with a tender crumb that melts in your mouth. The addition of finely ground almond oolong and orange tea leaves adds a unique twist, enhancing the overall flavor profile. Excellent with tea.

- 1/2 C unsalted butter (softened)
- 1 C granulated sugar
- 1 lg egg
- Zest of one orange
- 2 T orange juice
- 1 t vanilla extract
- 1 1/2 C all-purpose flour
- 1/2 C almond flour
- 1/2 t baking powder
- 1/4 t baking soda
- 1/4 t salt
- 2 T Almond-Orange Cookie tea leaves, finely ground
Directions
PREPARE THE DOUGH:
1. In a large bowl, cream together the butter and sugar until light and fluffy.
2. Beat in the egg, orange zest, orange juice, and vanilla extract until well combined.
3. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, Almond-Orange Cookie tea leaves.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
BAKE THE COOKIES:
1. Preheat the oven to 350°F and line baking sheets with parchment paper.
2. Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
3. Bake for 12 - 15 minutes, or until the edges are lightly golden.
4. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
