Blue Raspberry Chocolate Tarts
Delicious tarts perfect for spring, teeming with berries and sweetness.

- Chocolate
- 1/4 cup milk
- 1 tsp Raspberry tea
- 1/4 tsp vanilla
- Pinch of salt
- 3 oz dark chocolate
- Berry sauce:
- 1 cup mostly raspberries, some blueberries
- 1/3 cup sugar
- 1 tsp lemon juice
- 10 small tart shells
- Extra berries for decorating
Directions
In a bowl, mash the berries, lemon juice, and sugar together. Let sit for 30 min.
While the berry mash sits, heat up the milk and tea in a small saucepan. Strain, and pour over the chocolate, salt, and vanilla. Mix up, then coat the interior of the tart shells with the chocolate. When the mash has sat, pour through a sieve and fill the tarts. Top with berries, chill for a bit, then enjoy.
