Ice Cream Chai Pie
With a few store bought base ingredients, this recipe is both easy to make and a great way to mix in those fall spices on those hotter late summer days. This involves little active prep time, but you do need to plan ahead so the ice cream has a chance to soften and re-freeze.

- * Graham cracker crust (I used a pre-made gluten free crust)
- * 3 cups Vanilla Ice Cream
- * Selefina Pumpkin Pie Spice
- * 1/2 apple, cored and cut into 8 slices
- * 1 TBSP tapioca starch
- * Vegetable oil (enough to cover a pan 1 inch deep)
- * 1 TBSP butter
- * 1/4 cup honey
- * 1 cups brown sugar
- * 1/4 cup heavy cream
- * 8 oz strongly steeped honeybush pumpkin chai tea (two TBSP dry tea)
- * 1/4 tsp Selefina Fleur de Sel sea salt flakes
Directions
Pie Base:
* Scoop 3 cups vanilla ice cream into a bowl and allow to soften.
* Sprinkle Selefina pumpkin pie spice liberally (to taste) into ice cream. Cut in with fork or pastry cutter until well blended.
* Spread ice cream mixture into graham cracker crust and freeze at least 2 hours.
Apple Garnish:
* Coat apple slices lightly with tapioca starch (potato starch can be used as a substitute).
* Pour oil to one inch depth in pot and allow to heat.
* Drop apples in and allow to cook until browned, rotating at least once during process.
* Transfer to paper towels to cook and absorb some oil
---- Alternative: For a slightly healthier version, coat apples with a small amount of cooking spray and cook in an air fryer instead of oil
Caramel Sauce:
* Melt butter in a medium sauce pan on medium low
* Add tea, honey, and sugar, stirring constantly until mixture comes to a low boil.
* Turn down heat to a low simmer for about 15 minutes, stirring frequently
* Add cream, stir, and allow to cook for about 5 more minutes. Mixture should coat spoon.
* Remove from heat and allow to cool to at least room temp.
Assemble Pie:
* Arrange the pie slices into a star burst in center of pie. Spiral caramel sauce from center of pie outward. Feel free to be generous, you will have plenty! Place remaining sauce on table for those who'd like to a more generous pour!
