Apricot Green Tea with Cardamom Sorbet
When you want something refreshing and cold but don't want the heaviness of ice cream, sorbet is the way to go. This version pairs apricots with green tea and a touch of cardamom for a tasty, slightly refined treat.

- Tea:
- 3 tsps Apricot Green Tea (adagio recommended)
- 2 cups of water
- Apricot Syrup:
- 3 apricots pitted and sliced
- 1 cup sugar
- 1/4 tsp cardamom seeds (Selefina recommended)
- 1 cup of water
Directions
Tea:
Brew the 3 tsps of tea in 2 cups of 180 degree water for 3 minutes. Strain and set aside to cool.
Apricot Syrup:
Add the apricots, sugar, cardamom seeds and water to a small pot. Heat over medium heat for about 10 minutes until the sugar is dissolved and the apricots are translucent and soft. Turn off the heat and let the mixture sit for an additional 10 minutes to infuse before pouring through a fine mesh strainer, pressing lightly on the solids to extract as much liquid as possible. Discard the solids.
Sorbet:
Blend 2 cups of tea and 1 cup of the apricot syrup into an airtight container and refrigerate until thoroughly chilled. Once chilled, pour mixture into an ice cream/ sorbet maker and freeze according to the manufacturer instructions. Freeze until ready to serve.
If no ice cream maker, pour the mixture into a 13x9 cake pan and place in the freezer, scraping periodically while it freezes to make a granita-styled treat.
