Creamy Spiced Apricot Popsicles
Cool refreshing summer dessert

- 2 Apricot & green tea bags
- 3 ripe apricots – pitted & cut into 8 pieces each
- 3 Tablespoons of honey
- 12 ounces of boiling water
- 1 cup vanilla bean ice cream
- 1 teaspoon cardamom
- 6 popsicle molds & if not part of the molds, 6 popsicle sticks
Directions
Place the tea bags, apricot pieces & honey in a large glass measuring cup, pour the boiling water on top & allow this to steep for 20 minutes.
While the tea steeps, place the ice cream into a bowl & zap it in the microwave for 10 seconds, you want to soften it so you can stir the cardamom into it. Once the tea has steeped, remove the tea bags & put it in the freezer to cool & put the ice cream into the freezer to refreeze. After an hour make your popsicles, place 2 pieces of apricot into each popsicle mold, then a little ice cream & then some tea, repeat: 2 pieces apricot, ice cream, tea & top each one off with a little more ice cream. Put on the lids, if your using the molds with the lid & stick in one, you’re done, if you have to put the wooden stick in, wait about 35 minutes (set a timer so you don’t forget) then put the sticks in. Let them freeze completely, this normally happens in 7 or 8 hours, just depends on the freezer. To eat, dip them three fourths of the way into a bowl of hot water for a few seconds, then slide them out of the molds. To store, place them separately in plastic sandwich bags & store in the freezer for up to 3 months.
