Chocolate Truffle Date Paste
A sweet chocolate spread made from only two ingredients: tea and dates. Delicious spread over toast for an easy and quick breakfast, or on a rice cake with a sprinkle of sea salt as a healthy snack. Change the flavor by adding vanilla, almond, or coconut extract, or stirring in your favorite nut butter.
The date paste can also add natural sweetness to smoothies, cooked cereal, or desserts, and be used as a substitute for sugar and maple syrup in baking.

- 1 Tbsp Adagio Chocolate Truffle tea, steeped in 1 cup 190°F water for 3 minutes
- 2 cups Medjool dates, pitted
Directions
1. Steep tea. Strain.
2. Place the pitted dates in a bowl and cover with the infused tea. Allow the dates to soak for 10-30 minutes or until soft. Strain, reserving liquid.
3. Blend dates in food processor or blender until smooth and spreadable, scraping down the sides of the bowl to make sure all of the dates are incorporated and adding reserved soaking liquid as needed.
4. Store the date paste in an airtight container in the fridge for up to two weeks. Freezes well.
Note: Medjool dates are super soft and really sweet. If you use a variety of date other than Medjool, you may need more liquid. The spread may also turn out less sweet. But it will still be good!
