Merry Grinchy Minty Cookies
Merry-Minty Grinchy Holidays! - 2 Cups Unbleached All-Purpose Flour
- 1/4 Teaspoon Salt
- 2 Teaspoons Orange Zest
- 2 Teaspoons Peppermint Tea
- 1 Cup Butter, softened
- 3/4 Cup Powdered Sugar
- 1 Teaspoon Vanilla
- 1 Teaspoon Fresh Orange Juice
- 1 Cup White Chocolate Chips
- Couple of Drops Green Gel Food Coloring
- 3 dozen Tiny Red Hearts
Directions
In a small bowl, whisk the flour, salt, orange zest together. Rub the tea between your finger to break it down a bit. Whisk into the flour mixture.
In a large mixing bowl beat the butter and sugar until smooth and creamy. Beat in vanilla and orange juice. Slowly add the flour mixture until just combined. Form dough into a rectangular log and wrap in plastic wrap. Chill dough at least 1 hour.
After chilling, preheat oven to 325 degrees F. Line a cookie she with parchment and set aside.
Slice cold log into 1/4-inch-thick cookies. With a small heart cookie cutter cut a heart into the cookie. Place on prepared cookie sheet and refrigerate for 15 to 30 minutes. Put in preheated oven and bake 10 to 12 minutes. Remove to cooling rack after cooling 5 minutes on sheet. Cool completely.
Melt Chips in microwave for 30 seconds, stir, continue microwaving 10 seconds at a time stirring in between until melted. Stir in food coloring. Dip tip of cooled cookies in the melted chips. Decorate with tiny red hearts.
Makes 3 Dozen Cookies and 3 Dozen Hearts.
