Dragonfruit Dream Cream Cake

Most of the hard part of this cake is waiting for the custard to set. Otherwise, it's super easy and absolutely delicious

Ingredients

  • Custard:
  • 3 egg yolks, 3 tbsp sugar, pinch salt, 3/4 cup milk, 1/4 cup heavy cream, 1 tsp vanilla, 3 tsp dragonfruit dream
  • Cake: 3/4 cup butter, 1 3/4 cup flour, 1 1/2 tap baking powder, 1/2 tsp salt, 1 cup sugar, 3 eggs, 1 1/2 tsp vanilla, 1 1/2 cups berries of choice (I used blackberry)

Directions

Custard:

The night before, set the tea in the milk to infuse overnight. The next day, whisk eggs, salt, and sugar together in a saucepan. Add milk and cream, then heat on medium high until thick enough to coat a spoon and hold a line drawn in it. Set in a bowl to cool, then pop it in the fridge for 2-3 hours.

Cake:

Mix the dry. Cream the butter with sugar, add the eggs, then vanilla. Add dry ingredients and half the custard and mix until just blended. Put in a pan, smooth top, then sprinkle berries and custard on top. Bake 40-45 min and enjoy!
