Cherry Almond Scones

These scones are not only delicious, but incredibly easy to make! They pair quite nicely with a hot cup of tea!

Ingredients

  • 3/4 cup almond milk
  • 1 tsp cherry marzipan oolong
  • 1 3/4 cup flour
  • 4 tbsp brown sugar
  • 1 tsp baking powder
  • 1/4 cup solidified (cold) coconut oil
  • 1/2 tsp almond extract
  • 1/4 cup chopped almonds
  • 1/4 cup diced cherries (fresh, frozen, maraschino, etc)

Directions

1. Steep cherry marzipan tea leaves in almond milk for a minimum of five minutes. Strain right before using.

2. Preheat oven to 400 degrees F. Line a baking tray with parchment paper.

3. Mix all dry ingredients together in large bowl.

4. Add solidified coconut oil, cutting into the dry ingredients until mixture is crumbly.

5. Slowly add in wet ingredients, stir until just mixed.

6. Fold in cherries and almonds, reserving some almonds to sprinkle on top.

7. Knead dough 7-10 times, then roll out one inch thick circle on baking tray parchment.

8. Sprinkle with remaining almonds; cut into 8 slices.

9. Bake for 10-15 minutes
