Earl Grey Bravo Crepes
Crepes are French pancakes that can be filled with either sweet or savory toppings. In this recipe, we combine this classic dish with the citrusy tones of Earl Grey Bravo, a black tea flavored with bergamot oil and orange. These crepes are great on their own, though they pair especially well with orange or vanilla creams and custards, chocolates, and berries.

- 3 tbsp unsalted butter (plus butter for greasing skillet)
- ¾ cup Earl Grey Bravo tea
- 1 cup flour
- 1 tbsp. sugar
- ⅛ tsp. salt
- ½ cup milk (room temperature)
- 2 eggs
- 1½ tsp. orange juice
- 1 tsp. orange zest
- Filling and toppings of choice, such as jam, marmalade, whipped or Bavarian cream, butter, fruit, chocolate, powdered sugar, etc.
Directions
1- Melt the butter. Set aside to cool to avoid cooking the eggs.
2- Combine all dry ingredients in a mixing bowl.
3- Add milk, tea, eggs, orange juice, and zest and stir until smooth.
4- Put crepe batter into the fridge for at least 30 minutes to rest.
5- Apply a thin layer of butter to a skillet at medium high heat. Spoon out ¼ cup of batter into the pan, tilting the pan to get the batter to spread. Flip when set, then remove from heat when the other side is lightly browned.
6-Once the crepes are complete, you can either fill them with things like fruit, cream, jam, etc., or stack them into a cake shape with filling in between the layers. Top with extra fruit, chocolate, or sugar to desired taste and enjoy!
