Chamomile Tea Panna Cotta
A simple chamomile-flavored panna cotta. Serve with berries or some tuiles for a light treat. Half hour to cook/prep. 4-5 hours chilling time.

- 2 tbsp. water
- 1 tbsp. gelatin
- 2 c. heavy cream
- 1 c. whole milk or half and half
- 1/2 c. sugar
- 4 tbsp. chamomile tea leaves
Directions
Put water in saucepan and sprinkle gelatin on top. Let stand for 1 min., then heat slowly until dissolved, about 3 min. In another saucepan, heat cream, milk (or half and half), and sugar, stirring until sugar is dissolved. Bring just to the boil, then immediately take off the heat. Add the chamomile tea leaves and let steep for 5 min. Pass through a fine sieve, cheesecloth, or coffee filter set in a strainer and mix in gelatin mixture. Pour into 6 ramekins and chill 4 hours. Serve in the ramekins with some whole berries on the side, or on pureed berries, or with the berry puree on top. Or turn out of the ramekins and serve as desired.
