Jasmine Tea Cookies
Light and crispy jasmine tea cookies perfect with afternoon tea!

- 1/2 c. butter, softened
- 1/2 c. sugar
- 1 egg
- 1 1/2 c. flour
- 2 tbsp. strongly steeped jasmine tea
- 1/2 tsp. crushed jasmine tea leaves
- 1/2 tsp. baking powder
- dash salt
- sugar to sprinkle
Directions
Steep 2 tsp. of Jasmine Tea in 1/4 c. of 180°F water for 5 min.
Set in fridge to cool.
Mix sugar and butter in a large bowl until creamy.
Add egg and mix until batter is fluffy.
Blend in flour and 2 tbsp. of the strong jasmine tea brewed earlier.
Crush 1/2 tsp. jasmine tea leaves and sprinkle into batter along with the baking powder and salt. Mix well.
Using wax paper or plastic wrap, roll and form the dough into a 2"x12" log.
Wrap in wax paper and refrigerate until dough is firm, about 1 hour.
Preheat oven to 350�
Slice dough from chilled log in 1/4" slices. Place on nonstick, ungreased cookie sheet,�and sprinkle tops with sugar.
Bake 8-10 min. until lightly browned.
