Dragon fruit dream tea biscuits

- All purpose flour 225g
- Dragon fruit dream tea (ground) 4g
- Salt 3g
- Granulated sugar 30g
- Baking powder 8g
- Baking soda 3g
- Unsalted butter (cut into 1cm cubes) 30g
- Milk 100g
- Greek yogurt 70g
- [filling and topping]
- Strawberry (remove stem) 1 pack
- Heavy whipping cream 200g
- Dragon fruit dream tea (ground) 4g
- Sugar as needed
Directions

Sift the dry ingredients into a bowl. Rub the butter with your hands to combine the butter and flour. Add milk and yogurt and mix with a rubber spatula. When it loses its bulk, transfer it to a flat area and shape it into a 15 by 10 cm rectangle. Cut it in half, put it on top of the other, and gently press it down to reshape it into a 15 by 10 cm rectangle. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour. Preheat the oven to 390F. Cut the dough into 6 equal parts, arrange then on a baking pan lined with parchment paper, and bake for 15 minutes.
[filling and topping]
Cut strawberries into 4 equal pieces. Mash about 1/4 of the pieces with a fork. Set aside for 30 minutes to allow the moisture to come out. Whip the cream and dragon fruit dream until soft peaks form. You can also add 1-2 teaspoons of sugar.
[assembly]
Cut the biscuits in half horizontally. Scoop the bottom half with cream and strawberry. Cover with the top half of the biscuit, and put cream and strawberry on top.
