Frozen Watermelon Parfait
A cold treat that is summer in a glass! Featuring all the best desserts of summer, it's easy to make and looks absolutely gorgeous.

- So this is a very slap together kind of recipe, but I'll give the gist
- 1 watermelon
- 4-6 tsp watermelon cooler tea
- 20 oz water
- 1/3 cup sugar
- rainbow sherbet
- vanilla ice cream
- whipped cream
- watermelon jelly
- frosted flakes (or other crunchy flake cereal)
Directions
Brew the tea in the water for 10 minutes. While that's going, cut the watermelon. Cube half, and juice the other half. Strain the tea, add the sugar, and 3/4 cup of watermelon juice. Set the rest in the fridge for later. Mix the tea/sugar/juice, and set in the freezer until solid. If you have molds that would make it into sticks, use those. When the melon ice is frozen solid, get everything together, including tall glasses. This is gonna make enough melon ice for a lot of parfaits, but I only made 3. Shave the ice by scraping with an ice cream scoop or grater. Layer the ingredients from top to bottom:
Watermelon juice
Jelly (this will keep the frosted flakes crunchy)
Rainbow Sherbet
Melon Ice
Ice Cream
Whipped Cream
Jelly
Cubed Melon
Serve with a long handled spoon if you have one, and enjoy!
