Tea Cookies
just a simple cookie spiked with some good tea. I recommend using Bella Luna for this

- 6 Medjool Dates
- 3 tbsp coconut oil ( I use an oil-free butter that i make)
- 2 tbsp Plant mylk of choice
- 100 g Flour (gluten-free, all-purpose)
- 20 g Tapioca flour/starch
- 1/2 tsp Baking Powder
- pinch of Salt
- 1 tbsp Tea (Earl Grey - Bella Luna)
Directions
Puree: dates, oil/butter, and plant mylk
Grind tea to a powder
Measure and mix: flour, tapioca, baking powder, tea, and salt
Combine flour and puree
Roll into a log 1 1/2 to 2 inches round and wrap
- or press into molds
Freeze for 20-30 min
Slice into 1/2 inch thick pieces
- or demold
Bake @350F for 15-18 min
