Citrus-Tea Salmon
Lemon, orange, Adagio Irish breakfast tea, and brown sugar encrust this salmon, giving it a flavorful zing.

Directions
Preheat oven to 350°F.
With a mortar and pestle, coarsely crush the Irish breakfast tea.
In a small bowl mix together the crushed tea, orange peel, ginger, sugar, salt and pepper.
In a separate bowl, mix egg and lemon juice together.
Dip each salmon fillet in the egg mixture and place on baking pan.
Sprinkle the citrus-tea rub on each and spread evenly to coat.
Cook in oven for 20 min. until fish flakes easily with a fork.
