Green Pekoe Brined Pork Loin
A moist and delicious pork loin with subtle flavoring.

- 4 c. cold water
- 1/3 c. sea salt
- 1/3 c. brown sugar
- 1 tbsp. peppercorns
- 2 tbsp. green pekoe tea leaves
- 2 lb. pork loin
- 2 tbsp. cooking oil
- 2 tsp. paprika
Directions
Bring water, salt, sugar, and peppercorns to a boil. Remove from heat and add tea. Cool solution to room temp.
Place pork loin in a self sealing plastic bag and add enough brine to cover. Place sealed bag in large bowl. Weigh the meat down by placing an object (such as a can of vegetables) on top so that the meat remains submerged. Refrigerate at least 4 hours or overnight.
Remove pork from brine solution and rinse and pat dry. Discard brine. Brown pork on all sides in vegetable oil. Sprinkle all sides with paprika and place in a 350°F oven for approximately 1 hour until cooked to desired doneness.
Prep Time for brining solution about 5 min. Cool time for brine about 1 hour. Actual brining time 4-8 hours. Cook time approximately 1 hour.
